Hard Ginger Beer

I'm currently experimenting with ginger beer.

With my current method I hope to create a very tasty and refreshing summer drink.

Ingredients:

  • Ground ginger
  • 600gm sugar
  • 6 Litres of water
  • 1/2 teaspoon of dried yeast
  • 2 Lemons

First make the ginger plant.

  1. Into a jar place 1/2 teaspoon of dried yeast, 1 teaspoon of ground ginger, 2 teaspoons of sugar and 300ml of water.
  2. Stir and keep covered at room temperature.
  3. Feed the plant each day with 1 teaspoon of ground ginger and 1 teaspoon of sugar. Stir after each feeding.
  4. The plan will be ready after 1 week.

Making the ginger beer

  1. Place 500gm of sugar into 1 litre of boiling water. The sugar will disolve.
  2. Add the juice of the lemons to the mixture.
  3. Strain the contents of the plant into the mixture.
  4. Add 4 litres of room temperature water.
  5. Stir and bottle. Leave 10% of the bottle empty to allow for expansion. I prefer plastic bottles so I can squeeze out the air and ensure no explosions.
  6. Store the bottles at room temperature for 3 to 4 weeks.
  7. With the remainder solid portion, discard 1/2 and add the other 1/2 with 300ml of water in a clean jar and feed as usual.
