I'm currently experimenting with ginger beer.
With my current method I hope to create a very tasty and refreshing summer drink.
Ingredients:
- Ground ginger
- 600gm sugar
- 6 Litres of water
- 1/2 teaspoon of dried yeast
- 2 Lemons
First make the ginger plant.
- Into a jar place 1/2 teaspoon of dried yeast, 1 teaspoon of ground ginger, 2 teaspoons of sugar and 300ml of water.
- Stir and keep covered at room temperature.
- Feed the plant each day with 1 teaspoon of ground ginger and 1 teaspoon of sugar. Stir after each feeding.
- The plan will be ready after 1 week.
Making the ginger beer
- Place 500gm of sugar into 1 litre of boiling water. The sugar will disolve.
- Add the juice of the lemons to the mixture.
- Strain the contents of the plant into the mixture.
- Add 4 litres of room temperature water.
- Stir and bottle. Leave 10% of the bottle empty to allow for expansion. I prefer plastic bottles so I can squeeze out the air and ensure no explosions.
- Store the bottles at room temperature for 3 to 4 weeks.
- With the remainder solid portion, discard 1/2 and add the other 1/2 with 300ml of water in a clean jar and feed as usual.
