
This is a traditional Japanese meal, to be eaten at home among the family. It’s considered too humble to be served to guests, or at restaurants, but don’t let that stop you – it’s quick and easy, and very tasty. You don’t need much salmon per person, so it’s reasonably cheap as well. This is my favourite way of using up any left-over salt grilled salmon; in fact, we often cook salt-grilled salmon just to make this. Try it – you’ll be surprised how tasty it is!

Ingredients:
- 2 x 100gms salt-grilled salmon (you can use pre-packaged smoked salmon fillets, or tinned salmon at a real pinch)
- 1 small teapot of strong Japanese green tea
- 2 cups Japanese short-grained rice
- Wasabi paste (optional)
Directions:
- Cook the rice in your rice cooker, or by whatever method you choose.
- Make the tea and let it steep for a few minutes.
- Shred the salmon roughly with a pair of forks, and put it on top of the rice.
- Garnish with a little wasabi, if you want it, and serve with the pot of tea – each person should pour some tea over their salmon and rice to make it slightly liquid, then eat.
