This is possibly the simplest way I know to cook fish, and my favourite. You end up with juicy, succulent salmon, full of flavour. Try it – it’s amazingly easy, and amazingly good!

Ingredients:
- 2 x 200g Salmon Fillet. No more than 5cm think.
- 2 teaspoons sea or rock salt per piece of salmon.
Directions:
- Rub the salt into both sides of the salmon, and leave to sit for about 20 minutes.
- Rub the salt off well, and dry with a piece of kitchen towel (you can wash the salt off if you’re trying to reduce the amount of salt in your diet, but it’s not essential).
- Cook under a hot grill for about 4-5 minutes per side, until both sides are lightly browned.
You can also use leftovers for Salmon with Rice & Green Tea
