Chilli con carne

This is one of my favourite recipes. Great for those cold winter days, and even better with beer on a hot summer day! I usually serve it with long grain white rice.

Prep Time: 10 Minutes
Cook Time: 70 Minutes
Ready In: 80 Minutes
Serves: 4

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 kilo beef mince
  • 1 finely chopped onion
  • 1 diced capsicum (usually green for contrast)
  • 4 cloves garlic, finely chopped
  • 1 can kidney or pinto beans, drained
  • 1 can of chopped tomatoes
  • 1/4 cup dry white wine
  • 1 1/2 tablespoons chilli powder
  • 1 finely chopped hot chilli (jalapenos or the like)
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon dried oregano, crushed

Directions:

  1. Heat the oil. Add garlic, then onion.
  2. Once onion is cooked till transparent add beef and cook until meat is no longer pink.
  3. Stir in beans, wine, tomatoes, chili, chili powder and spices.
  4. Simmer for about an hour.
  5. Serve hot.
