Poached Chicken Breast

This is one of the quickest and easiest things to do with chicken that I know. For a long time, it was my comfort food – it’s quick and simple to prepare when you’re tired, stressed, or not well, and it’s plain, yet tasty enough to be tempting when you’re not feeling well. Plus, it’s low in fat and high in protein. What more could you want!

Serves: 2

Ingredients:

  • 1/2 chicken breast per person (about 200gm of meat), skin and fat removed

  • 200ml of chicken stock per person (pre-made stock is fine, but not a stock cube for this one, please!)

Directions:

  1. Bring the chicken stock to a simmer.

  2. Put in the chicken breast, cooking it until it’s just cooked through – you can tell it’s cooked when it no longer bleeds pink juice if you put a knife into the thickest part. It should take about 10 minutes to cook.

  3. Serve. Quite good with plain rice cooked in chicken stock, and some steamed vegetables, or you can serve it sliced through a salad, or with a little Chinese ginger and shallot sauce. If you like, you can add a few slices of fresh ginger to the stock for some extra flavour.
