Slow cooked chicken in lemon and garlic

A very easy way to make chicken. I especially like it as I can make it at lunch and it fills the house with the smell of cooking chicken, garlic and lemon for the whole afternoon.

Ingredients

  • 1 kilo of chicken. Breast and drumstick best
  • 1 teaspoon oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons of butter
  • Water, as needed
  • 4 tablespoons of fresh lemon juice. Strain only the seeds, leaving some flesh in with the juice
  • 4 cloves garlic, crushed
  • 4 cloves of garlic, sliced
  • 1 cup chicken stock

Directions

  1. Wash chicken and dry on paper towels.
  2. Combine oregano, salt and pepper in a small bowl. Sprinkle on the chicken and pat it in.
  3. Fry the chicken with the butter until lightly browned.
  4. Transfer chicken and butter to the crockpot.
  5. Add the lemon juice, stock, garlic and a little water to the pan. Scrape the pan, collecting remainder chicken and butter. Bring mixture to a boil and pour over the chicken.
  6. Add enough water into the crockpot to cover the chicken
  7. Cover and cook on High for 2 1/2 - 3 hours or on Low for 5 - 6 hours.
  8. Serve on boiled rice
